Spelled is the oldest type of wheat used by man. In order to be consumed on our tables, it must undergo some work processes. Among them, pearling is the operation through which, by scratching the surface of the seed, a lighter grain is obtained and, therefore, more similar to rice. This processing, while not affecting the nutritional and organoleptic properties of the cereal, makes it less rich in fiber than merely hulled spelled. It is great for cold salads and soups.
